Things You’ll Need
-
12 large kiwifruits
-
1 cup granulated sugar
-
1/4 cup full-fat coconut milk or cream
-
Zest and juice from a small lime
Step 1: Cut the Kiwifruits
Peel the skins from the kiwifruits, then roughly chop them up into cubes.
Step 2: Blend
Place the kiwifruits, sugar, coconut milk or cream, lime zest and juice in the bowl of a food processor or blender.
Blend to form a very smooth puree, about a minute.
Step 3: Freeze
Pour the mixture into a small metal loaf or cake pan and smooth into an even layer.
Cover with a layer of plastic wrap and freeze until firm but still a little soft for scooping, about 2 hours.
Step 4: Serve
Use a just warm ice cream scoop or large-size spoon to scoop the sorbet from the pan and into serving bowls. Serve immediately.
If your sorbet is a little too firm, let it sit at room temperature for 10 minutes before scooping and serving. The sorbet is best kept covered for up to 2 months in the freezer.
